As restaurant owners and Italian, good pasta is our holy grail. The pastas we use when we can’t freshly make our own, come from a small number of authentic Italian labels. Chosen for our Pappardelle Pantry because they are stacked with traditional artisan methods and true to the natural simplicity of ingredients. By Italian law, dried pasta must be made with 100% ‘Durum Semolina’ flour. Our makers use the finest, shape through traditional moulds and slowly air-dry. The results are so different from ‘mass-produced’ brands. A delightful ‘mouth-feel’ plus superior sauce holding nature. Enjoy these fruits of our intimate pasta knowledge. These will bring the artisan regions of Italy into your cuinca. Rice & Grains Rice Pappardelle selections Much more than ‘risotto’ rice! In our restaurant, we use specific Italian rice types to match our recipes. Rice is catergorised under Italian law as: Communi – short-grained. Semifini – medium-grained. Superfino or Fini and - long-grained. The famous aboria short-grain deliciously holds in stock. The risotto ‘rice king’ is Camaroli, and Vialone nano is the one for the Veneto region. We know these like the back of our recipe sheets. Over generations of our family cooking, certain labels have always starred. Produced from organic farms, awarded for authentic style or made without compromise. Now they are selected for our Pappardelle Pantry. Enjoy cooking Italian with authentic regional rice.
